Coming at you thanks to a recent request from my fellow TMS teachers- Caitlin’s Cocktails!
Last Friday, a few of us were thrown behind a bar in Newport for a fundraiser and let me tell you, it was a hoot. I bar-backed in high school but Friday night was something else, and we had SO MUCH FUN.
Cue- Caitlin’s Cocktails, coined after I mixed a few Prosecco Sangrias (coming soon) and insisted I could be a real bartender. Now, I’m starting this new blog feature with a cocktail made with my favorite liquor: gin. A good ‘ol G+T with some Beefeater and a little Fever Tree? Talk about perfection.
Ryan has been buying clementines for the past few weeks and we eat them like candy, but still, some always seem to get a little too ripe to eat. This is the perfect cocktail because it takes your overripe winter citrus and utilizes the extra sweetness they provide.
I’m a huge fan of sweet cocktails, which is why I love topping drinks with ginger beer. However, if you’re averted, grate some fresh ginger and top with tonic or seltzer.
Clementine Gin and Ginger
Fill a cocktail shaker with ice and pour in 2 ounces of gin. Add the juice from three clementines (preferably a little over ripe) and just a bit of agave. Shake and pour into a cocktail glass, topping with ginger beer to taste. Garnish with a clementine slice and enjoy!
