Caitlin’s Kitchen: Gnocchi

I wish I could say that I am one of those kids with a little Italian grandmother teaching me her magic methods in the kitchen. Unfortunately, while my grandmothers do cook, they do not know the secrets of Italian cuisine. I do love a good Italian dish, though, and have recently been experimenting more in the kitchen. One of my recent endeavors, a meal I actually served as an appetizer for our thanksgiving meal this year, was gnocchi. Whenever I’m out at an Italian restaurant, I’m searching for gnocchi on the menu. There is something so warm and filling about…

Cold Weather Denim

Turtleneck: Mango | Overalls: American Eagle (similar styles here and here) | Oxfords: Forever 21 (similar styles here and here)  The leaves are gold and burnt orange, there’s a chill in the air, and I think New England has finally transitioned into my favorite season of all. There’s nothing like relaxing on a fall day, sitting outside while squirrels run from tree to tree and leaves fall. I almost didn’t believe we’d make it to this point, seeing as last week the temperature was recorded 15 to 20 degrees higher than the normal average, but we have and I for one am breathing a sigh of relief- and pulling out my…

Caitlin’s Confections: Salted Caramel Apple Crisp Ice Cream

A little while ago, I was home for the weekend and decided to attempt to make my own ice cream. My mom bought an ice cream maker last year and I know I’m going to be utilizing it a lot more now that I had such success! The Salted Caramel Apple Crisp Ice Cream above tastes as good as it looks, I guarantee. Before I begin the recipe I would like to include a couple tips: Feeze the ice cream bowl thoroughly, overnight if possible and chill your ice cream base and mix ins thoroughly as well. If you treat…

School Days

Whenever I’m given the opportunity to head home for a weekend, I take it. There’s something about getting away that is always so appealing. It’s also nice to come back to a place you’ve known all your life and see it with new eyes. Lately I’ve been wandering the streets of downtown Newport and noticing new beauty. There’s so much historic, colonial architecture: quaint little houses with front door steps perfect for sitting. I always drag my sister along. She’s become my residential ‘blog photographer’ and I think she’s pretty great. Also, I can get away with bossing her around. As we’re getting more…

Caitlin’s Confections: Inside Out Apple Crisp

Apple crisp is hands down one of my favorite fall desserts. The warm, nutty flavors blend perfectly with a freshly picked, crisp apple. These inside out apple crisps are a super easy version you can put together at any time! Ingredients 5 to 6 apples, depending on size 1 cup oats (I love Bob’s Red Mill Organic Oats) 1/2 cup crushed almonds 1/2 cup crushed walnuts 1/4 brown sugar First, gently hollow out the apples, removing the cores and stem. Mix together the oats, nuts, and brown sugar in a bowl until blended. Stuff the apples with the crisp mixture…
