New Year, New Blog

A very happy new year to you all! I can’t believe the holiday season is over and it’s officially 2017. I always appreciate the fresh start that comes with switching the calendar from December to January, and while resolutions tend to get a bad rap, I think it’s important to take a moment to assess where you were, where you are, and where you want to be. A new year is like a blank slate; you get to make it anything you want. I love having this blog as a creative outlet, but I’m particularly excited that I now host it:…

Caitlin’s Confections: The Best Chocolate Chip Cookies

Chocolate Chip Cookies have always been my thing. For parties, my friends always expected them, and the plate was cleaned within an hour. I feel like they’re one of those comfort foods, the kind you always want to have around. This recipe is my favorite: it’s fairly fool proof, with a few tricks thrown in. Ingredients:  2 sticks of butter or 8 ounces, melted 2 eggs 2 cups brown sugar 1/2 cup white sugar 2 1/2 cups of flour 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1 1/2 cups chocolate chips To Make:  Combine flour, baking soda,…

Caitlin’s Confections: Salted Caramel Pretzel Cheesecake

I have always been a huge fan of cheesecake. The crunch of the crust paired with the creamy top layer is such a perfect combination. It’s nice that such a decadent dessert can be so easily made- and it’s perfect for any occasion where you want to make a good impression. This salted caramel pretzel cheesecake does just that- impress. In just three easy parts, you’ve got the ultimate dessert. Before we get into the recipe, I’d like to note that I’m a different kind of baker. I believe strongly in the ‘throw it all in one pot’ method. Normally, it works, but somethings…

Caitlin’s Confections: Donut Tower

Tomorrow is my little sister’s 18th birthday and she has school, so I wanted to make her something that she could bring in to class that everyone would enjoy. Then I figured, New Englanders love Dunkin Donuts. Now, a donut tower is way more fun than a boxed dozen, so I got creative. I used a total of 14 donuts, but you could easily use more. In the end, with a few tooth picks and a couple homemade flags (“they’re cheesy, in a good way!” my sister said) my little project was complete.

Caitlin’s Confections: Pastel Meringues

This morning I set out on an adventure in the kitchen: making meringues. This seems to always happen when I’m home from school for the weekend and have more at my disposal than a microwave and a coffee pot. My mom only complains if I forget to do the dishes afterwards. Meringues are small, melt in your mouth cookies made from egg whites and sugar. For anyone with a sweet tooth, they’re a perfect treat, and luckily they’re also fairly easy to make. The recipe I used called for the whites of three eggs, however I doubled all the ingredients, using the…
