Caitlin’s Confections: Apple Berry Bourbon Bread Pudding

Got a bag of apples fresh from picking and a freezer full of berries leftover from the summer? Have I got a recipe for you! This Apple Berry Bourbon Bread Pudding was adapted from a recipe my grandmother makes and it is to die for.

I love a good bread pudding. It’s warm, sweet, soft, and the perfect cold weather dessert. Throw in some fruit and an incredible sauce and you have a show stopping dessert. I love how the fall flavors blend and I always serve it with whipped cream. Plus, you can throw a handful of toasted walnuts on top for the perfect crisp bite.

Bread pudding is also a great dessert for crowds or to serve after a big dinner party. Small servings are more than enough! Just make sure it’s warm.

Ingredients (Bread Pudding)

2 loaves of French bread (cubed and day old)

3 cups milk

2 eggs

1 c brown sugar

1 tsp. cinnamon

3 tbsp. butter (melted)

1 c diced apples

1 c mixed berries

Ingredients (Bourbon Sauce)

1 stick butter

1/2 c sugar

2 oz bourbon

Recipe

1. In a bowl, combine cubed bread and milk. Allow to soak for a minute before adding a blend of your eggs and brown sugar. Sprinkle with cinnamon and stir, pouring your soaked bread into a glass baking dish with melted butter in the bottom.

2. Add your fruit to the mix, stirring gently but leaving the majority on top. Bake for 45 minutes at 350 degrees.

3. While your bread pudding bakes, heat the remaining butter, sugar, and bourbon in a sauce pan. Bring the sauce to a boil and then bring down the heat. Let the sauce thicken slightly then remove from the stovetop.

4. When your bread pudding is done baking, remove from the oven and pour half the bourbon sauce over the top. Save half for right before serving and add whipped cream!
