I’m all about that BAKING.
Sometimes you just have to take all of your favorite ingredients and throw them into a pan together. I wanted brownies, but we didn’t have any cocoa powder so blondies seemed like the next best thing.
Brown sugar runs the show when it comes to a good blondie and the base for these is amazingly simple. Then I threw in what I liked- chocolate covered pretzels and peanut butter. Talk about an indulgent treat. Soft, chewy, melt in your mouth kind of indulgent.
1 stick of butter
1 c brown sugar
1/2 tsp baking powder
1/4 tsp baking soda
1 c flour
1/2 c peanut butter
1 c chocolate covered pretzels
In a stand mixer, whip one stick of butter until fluffy. Add one egg and one cup of brown sugar, mixing until combined. Then, add your baking powder, baking soda, and flour. If the batter seems thick, add a tablespoon or two of milk (optional!) until smooth. Your batter should slide off a spatula.
If you are making your own chocolate covered pretzels, melt two cups of chocolate chips with one tbsp of oil in the microwave at 30 second intervals. When smooth, drop in your pretzels and coat completely. Toss in the freezer for a few minutes to harden the break apart.
Add your chocolate covered pretzels to your blondie batter. Then, spoon into a greased baking dish. Heat your peanut butter in the microwave and using a butter knife, swirl your peanut butter into your batter. My suggestion- don’t over mix! Peanut butter can be an overpowering flavor and your still want to taste your blondie as well.
Bake at 350 degrees for 40 minutes or until the center is cooked through. Serve warm and with a BIG glass of milk.
