Caitlin’s Confections: Banana Oatmeal Bread

I feel like I’ve done a lot of banana-bread(ish) recipes on the blog but boy do I love this one. I don’t know about you, but I always have bananas going bad- perfect for baking into bread. Banana Bread is one of my favorite breakfast treats for a long weekend. This recipe is so quick and simple, it’s truly effortless to whip it up.

I will be candid- I ran out of flour when making my third batch of this bread. I do think it’s best with regular flour, however, when I substituted ground oats I found that things worked out just the same. If you’re looking for something a bit healthier, go for the oats. If you want to indulge, add regular flour instead!


2 ripe bananas

1/3 c honey

1/4 c coconut oil

1/3 c greek yogurt

2 eggs

1 tsp. vanilla

1 1/2 c ground oats

1 tsp. baking soda

1 tsp. cinnamon

dark chocolate chunks


For most one bowl recipes like this, I stick to one rule: add your wet ingredients, then your dry ingredients. Oh, and be very careful not to over mix!

Combine mashed bananas, honey, coconut oil, Greek yogurt, eggs, and vanilla. Stir in oats, baking soda, and cinnamon with a wooden spoon. Add chocolate chunks. When just combined, spoon into a loaf pan lined with parchment paper. Bake at 350 degrees for 50 minutes or until a knife comes out clean.
