Looking for a quick and easy breakfast food to feed overnight guests staying during Thanksgiving? These pumpkin donuts are just that! Make them a few days in advance and keep them around for when people get peckish.
Pumpkin Donuts
1 can pumpkin
1/2 cup vegetable oil
3 eggs
1 1/4 cup sugar
1 3/4 cup flour
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1 1/2 tsp. pumpkin pie spice (cinnamon, nutmeg, ginger)
Maple Glaze
1 1/2 cups powdered sugar
3 tbsp. maple syrup
3 tbsp. heavy cream
1. For donuts, mix all ingredients and place in a plastic bag. Cut the corner of the bag and use to fill your donut pan. Bake at 350 degrees for 13-15 minutes.
2. For glaze, mix all ingredients in a wide bowl. If needed, add more heavy cream until proper consistency is achieved. However, a thicker glaze is better.
3. While donuts are still warm, dip one side in glaze and let sit.
